Banana Fruit & Nut Bread

Rich and I have this, or a variation on this, almost every day for breakfast.   


Makes 9 generous servings.


3 large ripe bananas

2 cups (240 g.) whole wheat flour

1/2 cup sugar

1 tsp baking soda

1/4 tsp salt

1 Tbs canola or other mild cooking oil

2 Tbs applesauce

1 tsp vanilla

3 large eggs

1 cup chopped walnuts

2/3 cup Trader Joe's Dried Berry Medley (or other dried fruit)


Preheat over to 350 (or 325 if using convection) and oil breadpan.  Mix together flour, sugar, baking soda and salt and stir well with fork.  Mash bananas in large bowl.  Lightly beat and then add the eggs.  Add in the applesauce, oil, vanilla, walnuts and dried fruit.  Pour in flour and mix just until dried ingredients just incorporated.   Pour into prepared pan and bake for 55 - 60 minutes or until toothpick inserted into center comes out clean.  Cool in pan on rack for about 5 minutes and then remove from pan and cool on rack.
